Pork shoulder (kasim) cut into cubes for adobo, menudo and afritada. The shoulder has just enough fat to stay tender and juicy in a braise.
Brown, then braise in soy, vinegar, garlic and bay leaf for adobo, or simmer in tomato sauce for menudo and afritada.
